A Review of the Application of Matrix-Assisted Laser Desorption Ionization Mass Spectrometry Imaging in Food Analysis

Abstract: Matrix-assisted laser desorption ionization mass spectrometry imaging (MALDI-MSI), a new analytical technique, is widely used in biological, medical and other fields due to its usefulness for the detection of compounds without extraction, purification, separation, or labeling. Although the methodology of MALDI-MSI in food science is not yet fully established, its application is expected to open up a new insight in food science. In this paper, the principle of MALDI-MSI imaging is described and its application in sample preparation and food analysis is reviewed. Future prospects for MALDI-MSI application are also discussed. We expect that this review which will provide a basis for the application and popularization of MALDI-MSI in food analysis.
