Recent Advances in Application of Isotopic Dilution Mass Spectrometry in Food Analysis

Abstract: Isotopic dilution mass spectrometry (IDMS) is a quantitative analysis method that has been widely used in food analysis due to its rapidity, high sensitivity and accuracy. The basic principle and characteristics of isotopic dilution mass spectrometry are outlined in this article. Meanwhile, recent advances in the application of isotopic dilution mass spectrometry in food analysis in China are reviewed, and the limitations of isotopic dilution mass spectrometry in food analysis and future trends are also discussed.
