血红蛋白中二价铁离子保护研究进展

摘要: 动物血液深加工主要包括两个方面:一方面将其分离纯化得到血红素铁,另一方面将血红素降解并与铁螯合得到多肽-铁。由于两种形式的铁很不稳定,极易氧化成高价铁,从而限制了其应用,所以对其保护的研究尤为重要。本文就目前血红蛋白中二价铁离子保护工作作一综述。

Abstract: The deep processing of animal blood mainly emphasizes two parts: One is separation and purification of animal blood to obtain hemachrome-Fe (Ⅱ); The other is degradation of hemachrome and chelation with Fe (Ⅱ) to get peptide-Fe (Ⅱ) complex. In particular, unstability of and reducibility of Fe (Ⅱ) limit the application of animal blood. Therefore, investigation of Fe (Ⅱ) protection is the key step of the whole process. In this paper, the study of Fe (Ⅱ) protection of hemoglobin was summarized.
