瓶装糖水菠萝罐头倒置杀菌的传热特性

摘要: 500g胜利瓶装糖水菠萝罐头在倒立静置加热杀菌时,其冷点位置、热传导值都会发生显著改变。冷点上移,升温速度加快,杀菌效果优于正放的瓶罐。但杀菌时瓶罐重叠则对产品质量产生不利影响。自然冷却时,倒置的瓶罐冷点温度下降速度比正放时更快。

Abstract:  The cold point position and the heating rate of the glass jar pineapple in syrup will be changed, if the jar is fixed by downward laying in the retort. The cold point position will go up and the heating rate will be improved. However , if the jar is fixed by one on top of another , adverse effect will be produced during heating.
