摘要: 二氢杨梅素抗氧化活性优异,其作用机制是通过螯合金属离子,从而消除其对自由基氧化的催化作用。本文测定二氢杨梅素—铁螯合物在油脂体系中的抗氧化活性,通过与原物质活性的比较,发现此制备过程对其抗氧化活性影响很小,认为此螯合产物作为铁强化因子在油脂体系中有实际应用价值。

Abstract: Dihydromyricetin has excellent antioxidant activity . Its antioxidant activity embodies by chelating metal ion and clear the catalysis to free radical oxidation. In the paper, antioxidant activity of DMY-Fe Chelate in oil system is determined. It draws an conclusion that the antioxidant activity of DMY-Fe Chelate is similar with DMY itself. DMY-Fe Chelate as Fe supplier used in grease system has realistic value.
