摘要: 本文利用全酶法对美味牛肝菌多糖中β-葡聚糖的含量进行了测定。结果表明,三种酶的最佳用量为α-淀粉酶为2000U/g、胰蛋白酶为1500U/g、糖化酶为4000U/g,测得它的β-葡聚糖的含量是5.1%。

Abstract: An enzymatic method for analysis of technology in polysaccharides of Boletus edulis Bull has been studied in this paper .The experimental results showed that the optimal amount of three enzymes used were: α-amylase 2000U/g,trypsin 1500U/ g and saccharogenic enzyme 4000U/g. The yield of the sample obtained was 5.1% content of β-glucans.
