摘要: 本文综述了智能化食品感官分析体系的结构及其实现方案,介绍了相关性分析方法、神经网络、支持向量机等模式识别方法的原理、主要特点、存在问题以及在食品感官分析中的应用,并就模式识别方法在食品智能化感官分析体系构建中的应用研究提出了建议和设想。

Abstract: The structure of intelligent food sensory evaluation system was stated. The theory , features and problems of the pattern recognition methods applied for food sensory evaluation including correlation analysis methods , ANNs and SVMs and so on were analysed. In addition, some suggestions and assumptions about pattern recognition methods applied for constructing food sensory evaluation system were advanced.
