摘要: 多糖是水果中一类重要的功能因子,具有多种生物活性和广阔的应用前景。本文介绍了水果多糖的资源分布与利用、生物活性、分子修饰等方面的研究现状,并就水果活性多糖研究中存在的问题和未来研究方向与重点进行了探讨。

Abstract: Polysaccharide is an important health factor in fruits,which has been found to exert many aspects of biological activities and have a wide application prospect. This paper reviewed the current status of researches on fruit polysaccharide,especially in the resources and utilization,biological activities,and molecular modification of fruit bioactive polysaccharides. Furthermore,the problemes existing in the present researches on fruit bioactive polysaccharides,future research directions and emphasis in this field were briefly discussed.
