摘要: 如何维持/增加果蔬采后抗氧化活性是当前果蔬采后贮藏保鲜研究的热点问题,光辐射技术作为当前一种新兴的物理保鲜方法,对果蔬采后抗氧化活性具有显著的调控作用。本文首先简要综述光辐射技术主要的光源类型及可能的保鲜机理,重点阐述光辐射对果蔬采后抗氧化物质(VC、多酚类物质、类胡萝卜素)和抗氧化活性的调控作用,并对其可能的调控机制进行解析;最后就目前光辐射技术在果蔬采后贮藏保鲜研究和应用中存在的问题进行讨论。

Abstract: How to maintain and/or increase antioxidant properties of postharvest fruits and vegetables is a hot topic among researchers. Light irradiation, a new physical preservation method, has significant effects on antioxidant properties of postharvest fruits and vegetables. In this paper, the major light source types and the possible underlying mechanism are reviewed, mainly focusing on the regulatory effect and mechanism of light irradiation on antioxidants (vitamin C, polyphenolic compounds, and carotenoids) and antioxidant capacity in postharvest fruits and vegetables. Finally, we conclude with a discussion of problems existing in the research and application of light irradiation technology in postharvest preservation of fruits and vegetables.
