贵州百香果不同品系果实品质综合评价及鲜食与加工适宜性分析

Comprehensive Evaluation of Fruit Quality and Suitability Analysis for Fresh Consumption and Processing of Different Passion Fruit Strains in Guizhou

摘要: 百香果是贵州特色山地精品水果,但贵州当前主要栽培品种仅有‘台农1号’(紫果)和‘钦果9号’(黄果),产业发展遇到瓶颈,为解决品种单一的问题,以经初步评价的3 个紫果和7 个黄果品系成熟期果实为材料,测定果实的外观品质和内在品质指标,对比不同品系与主栽品种的差别,通过方差分析、相关性分析和主成分分析等方法筛选出单果质量、超氧化物歧化酶活力、柠檬酸含量、总黄酮含量和K含量为本次评价的核心指标,使用灰色关联度分析建立百香果果实品质综合评价模型,从鲜食和加工角度各选出1 个优良品系,再通过转录组分析初步了解代表性品系的潜在分子调控差异。结果表明,不同百香果品系果实的外观品质和内在品质均存在显著差异,柠檬酸是影响百香果口感的关键物质,K是百香果果实中含量较高的矿质元素,多数品质指标间存在不同程度的相关性,V2和V9分别是供试材料中综合评价最好的紫果加工和黄果鲜食品系,二者作为代表性紫果和黄果品系在果实关键次生代谢(香气和色素等)通路上存在明显差异。研究结果可为百香果果实综合评价体系建立、贵州百香果品种选育推广及果实品质遗传改良提供参考。

Abstract: Passion fruit is a specialty mountain fruit in Guizhou, but the major varieties currently cultivated in Guizhou are only ‘Tainong 1’ (purple fruit) and ‘Qinguo 9’ (yellow fruit), leading to bottlenecks in industrial development. To address the issue of limited variety, this study was performed on mature fruits from three purple cultivars and seven yellow cultivars, which had been preliminarily evaluated. External and internal fruit quality indicators were measured, and the differences between various strains and the major cultivars were compared. Using analysis of variance, correlation analysis, and principal component analysis (PCA), single fruit mass, superoxide dismutase activity, citric acid content, flavonoid content, and potassium (K) content were identified as the core evaluation indicators. A comprehensive evaluation model for passion fruit quality was established using grey relational analysis, and two excellent strains were selected: one for fresh consumption and one for processing. Transcriptome analysis preliminarily revealed potential differences in molecular regulation among representative strains. The results showed that there were significant differences in the external and internal fruit quality of different passion fruit strains. Citric acid was a key substance affecting the taste of passion fruits, while K was a relatively abundant mineral element in passion fruits. Most quality indicators showed varying degrees of correlation. V2 were identified as the best purple passion fruit strain for processing and V9 as the best purple strain for fresh consumption. As representative purple and yellow fruit strains, they exhibited significant differences in key secondary metabolic pathways of fruits (such as aroma and pigments). These findings provide a reference for establishing a comprehensive evaluation system for passion fruits, as well as for the breeding, extension, and genetic improvement of passion fruit varieties in Guizhou.
