Application of Immunosensors to Detection of Aflatoxin in Foods: A Review

Abstract:

Aflatoxins (AFTs) are a group of virulent substances having similar chemical structure. It is important for protecting human health and increasing international competitiveness of agricultural products to detect and control AFTs in foods in time. The development and application of aflatoxin detection in foods by means of various immunosensors are reviewed in this paper, especially the manufacture principle and the detection performance of electrochemical immunosensor as well as its application to detect AFTs in milk, wheat and corn. Recently, an intensive research effort has been performed on the application of immunosensors combined with screen printed electrodes, flow-injection immunoassays (FI-IA) and nano-materials which are used as a solid support or signal-amplification label. The application of immunosensors in food safety which has an extensive application prospect has become the focus of attention.
