Application of HACCP in the Processing of Moon Cake

Abstract: Hazard analysis critical control point is an advanced managerial method, which can strengthen the management ofenterprises themselves to ensure food quality and safety. HACCP is applied in managing the manufacture process of moon cakein this paper. In addition, carrying out HACCP can set up a model of management in enterprises of moon cake products.
