Application of HACCP System in Restaurant Industry

Abstract: Food safety is paid more attentions in the world wide, Hazard Analysis Critical Control Point System(HACCP)has gradually applied in food-making process as controlling system of food safety recently. In the every variety foodbornedisease because of food polluted, 60% the occurrence happened in restaurant industry. If HACCP system is practiced inrestaurant industry , it will be benefit to food safety. Taking the characters of Chinese food into consideration, the paperanalyzes how to applicate HACCP system in restaurant industry.
