Abstract: The HPLC assay of inosinic acid in animal muscles was improved in this experiment. The separation was carried out with Waters AtlantisTM dC18 analytical column(5μm, Φ4.6mm×150mm). The mobile phase consisted of 50mmolL pH6.5 ammonium formate buffer and methanol (95:5, VV). The flow rate was 1mlmin and UV detection was monitored at 254nm. The HPLC was performanced at 25℃. The results showed that the relative standard deviation of inosinic acid in muscle was 1.11% and its recovery was 100.33%~101.67%. This method could be applied to assay inosinic acid content in raw meat food morea ccurately.
