Microbial Preservation and Its Applications in Food Industry

Abstract: Microbial preservation is a kind of natural, safe and high effective food preservation produced by microorganism which can kill or inhibit the growth of other microorganism. The origin, classification, structure characteristic, mechanism of action, application and development prospect of microbial preservation in food industry were reviewed in this paper.
