A Comparative Study on Amino Acid and Fatty Acid in Sinonovacula constricta of Varied Populations

Abstract: A comparative study on the amino acid and fatty acid in the meat of Sinonovacula constricta was conducted among different populations in zhejiang sea areas. The results showed that all the populations contain essential amino acids, unsaturated fat ty acids.The variety of amino acid in differenr populations is accordant. All the populations contain many delicious amino acids(50%).The constitutes and contents of fatty acid did not have the same diversification in different populations.The content of SUFA of Fenghua farmed populations are higher than others; The content of PUFA of Changjie farmed populations are higher than others; The content of EPA and DHA of Yueqing farmed populations are higher than others; While the content of sub-oleic acid and linolenic acid of Changjie wild populations are higher than others.
