Research on Electrochemistry Behaviors of Gingerol

Abstract: The electrochemistry behaviors of gingerol were tested with differential pulse voltammetry and cyclic voltammetry in this article. The results indicated that the good anti-oxidation characteristic of gingerol was based on its great electrochemistry activeness. It was found that the activity was enhancing when pH was from 4 to 9, and gingerol’s Epa (electric potential of oxidation peak) was 0.16V, the precipitation electric potential of oxygen was 0.39V. Thus gingerol displayed the reducibility when it acted on active oxygen atoms, it took place oxidation reaction through receiving oxygen. Furthermore, the cyclic Voltammetry curve of gingerol indicated that the reaction was half reversible process.
