Abstract: In order to develop the resources of Lentinus edode further, the polysaccharides was extracted from the medium waste of Lentinus edode in this study.Through comparative analysis and L9(34) orthogonal test, the effects of ultrasonic power,material-water ratio and extraction time on the extraction rate of polysaccharides were investigated respectively. The results indicated that the optimal extraction conditions are as follows:extraction time 45 min,material-water ratio 1:30 and ultrasonic power 300 W,Under these conditions, the extraction rate of polysaccharides in up to 3.46%.
