Process Optimization for Double Enzymatic Extraction of Gingerol Oleoresin

Abstract: The present study was conducted to optimize the extraction of gingerol oleoresin from ginger powder by enzymatic hydrolysis with both cellulase and hemicellulase. By using one-factor-at-a-time and orthogonal array design methods, the optimal extraction conditions of gingerol oleoresin for achieving maximum extraction efficiency were determined as follows: ellulase-to-hemicellulase ratio of 5:3 (m/m), total enzyme dose of 2.8 mg/100 mL, hydrolysis time of 2.5 h and hydrolysis temperature of 45 ℃. Under the optimum conditions, the extraction efficiency of gingerol oleoresin was 3.711%, 30% higher than the yield of ethanol extraction.
