Characteristics of Collagen from Deer Bone

Abstract: Acid-soluble collagen (ASC) and pepsin-soluble collagen (PSC) were extracted from deer bone with acid and enzyme methods respectively. The basic properties of the extracted collagen were characterized through UV, FT-IR, DSC, SDS-PAGE and amino acid analyzer. The results showed that the maximum absorption wavelength of ASC and PSC are 234 nm on ultraviolet spectrophotometry; The shrinkage temperatures of ASC and PSC are 55 ℃ and 58 ℃ respectively; The electrophoresis results exhibited collagen extract comprises three different chains, α1 ,α2 and β; And amino acid compositions analysis revealed that the amino acids of ASC and PSC are typically Ⅰ collagen.
