Abstract: Traditional dairy products in Inner Mongolia are high quality medium for probiotic lactic acid bacteria. In order to complete the study of microbial diversity and bacteria species protection in dairy products in Xilin Gol. Six fresh milk samples from Sunite Left Banner and Dongwuzhumuqin Banner were selected for metagenomic sequencing analysis, then the traditional culture method was used to isolate and identify lactic acid bacteria (LAB). The results showed that a total of 47 strains of bacteria were isolated, of which 40 strains were LAB. The microorganisms identified by macrogene belonged to 8 phyla, 99 genera and 165 species, and the dominant bacteria were Lactococcus lactis and Leuconostoc mesenteroides. There were different species in the fresh milk of the two regions, but there was no significant difference in the diversity of α and β. 1408048 genes and 412 metabolic pathways were annotated by Uniprot database. The metabolic functions of amino acid synthesis and degradation were prominent, followed by sugar-acid transformation and oxidation reaction. This study not only analyzed the structural characteristics and dynamic changes of microorganisms in the local ecosystem, but also expanded the microbial species resource pool in ethnic habitats and played a positive role in promoting the industrialization of local dairy milk.
