烤红薯的污染分析与安全性评价

摘要:

为了解煤火烤红薯的污染问题,对市场上采用煤炭火烤红薯的5 个点采集了3 批次样品进行了S、Cu 、Pb、 Hg、 As 含量的测定。参照国家食品卫生标准和蔬菜质量分级标准,对烤红薯的污染程度进行了安全性评价。结果表明:在烤红薯的皮层、皮下肉层和中间肉层都受到了硫和重金属的严重污染,其综合污染指数分别为209.1、24.0 和3.9。

Abstract:

In order to understand the pollution problem of roasted sweet potato, the contents of sulfur, copper, lead, mercury and arsenic in sweet potato roasted by coal fire were analyzed. The safety evaluation of roasted sweet potato was conducted according to national food hygienic and vegetable quality grade standards. Results indicated that the skin, subcutaneous meat and central layer meat of roasted sweet potato were highly polluted by sulfur and heavy metals with comprehensive pollutant indexes of 209.1, 24.0 and 3.9, respectively.
