摘要: 本文利用滤纸基质室温磷光法和高锰酸钾滴定法研究了饮茶过程中的冲泡温度、冲泡时间、冲泡次数以及水质等对咖啡因及茶多酚溶解速率等的影响,从而对人们日常正确合理地饮茶提供了科学的依据。
关键词: 室温磷光, 咖啡因, 茶多酚
Abstract: The method of filter paper substrate room temperatuer phosphoremtry and potassium permanganate titration was applied for investigation on various factors affecting caffeine and tea polyphenols extraction.These factors were water temperature,infusing time and water quality.This paper proposed scientific and reasonable method and theory for tea-infusion in drinking.
