精炼餐饮业地沟油挥发性危害成分的GC/MS静态顶空分析

摘要: 精炼地沟油就是从餐饮业下水道隔油池中捞取的废油酯,经过一系列的工艺加工处理而得到的油脂。由于经过了多次的使用和复杂环境条件的影响,油脂会发生变质或者引入一些有害成分。在暴利的驱使下,不法分子将其回流到食用油市场中,给人们的健康带来极大的危害。本文应用气质联用的静态顶空方法,对精炼地沟油的易挥发成分进行了检测,实验结果表明,该样品油中含有大量的烷烃(从C9到C14)和油脂氧化变质的二级产物—己醛。

Abstract: The refined oil gained from the waste edible oil sewer collected from the waste edible oil pool of restaurants wasconducted by a series of refining methods. For being used repeatedly many times and influenced by the complex environmentalconditions, the refined oil would deteriorate or be introduced with some harmful component. If unlawfully sold in the edible oilmarket, it would do much harm to human health. This paper described a qualitative assay method of the volatile compounds ofthe refined edible oil gained from the sewer by static headspace and gas chromatography/mass spectrometry. Alarge amount ofalkane, from n-C9 to n-C14, and the second grade production of the deteriorated oil hexanal were identified in this experiment.
