摘要: 目的:研究了磁场对果蔬冷藏的保鲜效果。方法:进行了有无磁场以及不同磁场强度下果蔬冷藏保鲜试验。通过感官评定、失水率变化、VC和Fe含量变化,比较分析保鲜效果。结果:果蔬在磁场作用下其失水率降低,VC和Fe损失减小。结论:磁场可应用于果蔬的冷藏保鲜中。

Abstract: Object:To study the effects of application of magnetic field in fruits and vegetables during cold storage.Methods: Sensory analysis was utilized in different contrast experiments and water loss,VC and Fe contents were used as the test indexes. Results:Fruits and vegetables are better preserved under the magnetic field.Conclusion:The magnetic field can be applied in fruits and vegetables cold storage.
