不同酶解条件对米糠蛋白提取率影响的研究

摘要: 分别采用复合蛋白酶和纤维素酶对脱脂米糠进行蛋白质提取。结果表明,复合蛋白酶的米糠蛋白提取率明显高于纤维素酶解的米糠蛋白提取物。在复合蛋白酶用量2%、料水比1∶10、pH5.5的条件下,米糠蛋白的提取率可达52.7%。

Abstract: Protein was extracted from defatted rice bran with protamex and cellulase respectively. The results showed that the extraction rate of rice bran protein by Protamex is obviously higher than that by cellulose; The optimum hydrolysis conditions with protamex are as follows: pH 5.5, Protamex amount 2% , ratio of liquid to material 10:1; Under the conditions extraction rate of rice bran protein is 52.7%.
