TBHQ在不同油脂储存过程中转化产物的识别、分离与鉴定

摘要： 特丁基对苯二酚（tertiary butylhydroquinone, TBHQ）常作为抗氧化剂添加在油脂及富油食品中，由于其含有两个活泼酚羟基，在油脂储存过程中易转化而使其含量减少。以猪油、大豆油和棕榈油为实验原料，模拟储存过程，分析不同种类油脂储存过程中TBHQ转化情况。结果表明：随着储存时间的延长，油样中TBHQ的剩余量及叔丁基对苯醌（2-tert-butyl-1,4-benzoquinone，TBBQ）的生成量之和小于TBHQ原始添加量，并在不同油样甲醇提取液的气相色谱图中均发现除TBHQ和TBBQ之外相同的色谱峰。采用Prep-LC分别分离纯化出未知色谱峰，并采用UPLC-QTOF-MS、NMR、UV和FTIR对未知化合物结构进行鉴定与表征，实验证明TBHQ在不同油脂中的转化产物相同，除TBBQ外均含有另一转化产物2-甲基烯丙基-苯酚（2-methylally-hydroquinone, MAHQ）。

Abstract: Tertiary butylhydroquinone (TBHQ) is widely used as an antioxidant in oil and oil-rich foods. TBHQ contains two active phenolic hydroxyl groups, which can be easily converted during oil storage. Using lard, soybean oil and palm oil as raw materials, the storage process was simulated to analyze the TBHQ transformation during the storage of oil samples. The results show that: With the extension of storage time, the sum of the remaining amount of TBHQ and the production of 2-tert-butyl 1, 4-Benzoquinone (TBBQ) in the oil samples would be less than the original addition of TBHQ. The same chromatographic peaks except TBHQ and TBBQ were found in the gas chromatograms of methanol extracts from different oil samples. The unknown chromatographic peaks were isolated and purified by Prep-LC, and the structures of the unknown compounds were identified and characterized by UPLC-QTOF-MS, NMR, UV and FTIR. Another conversion product of TBHQ in fats is 2-methylally hydroquinone (MAHQ).
