Study on Effects and Application of Metal Elements in Fen Liquor

Abstract:

Twenty-four kinds of metal elements in Fen Liquors produced by different water or stored in different containers were quantitatively determined by flame atomic absorption spectrometry (determining Na, K, Ca, Mg, Fe, Zn, Cu, Mn, Ni, Li, Pb, Cd and Cr), graphite furnace atomic absorption spectrometry (determining Mo, Sr, Ba, Co, Ti, Al and Sn) or atomic fluorescence spectrometry (determining Hg, As, Se and Sb), and the effect mechanism of these metal elements on wine quality was primarily investigated. The results indicated that the kind and the content of elements in Fen Liquor were closely related with its production water and stored containers, that is to say, when produced by different water or stored in different containers, the kind and the content of elements in Fen Liquor were different, and the taste and maturation of Fen Liquor were also different. The present study could provide the scientific guidance for the selection of water source and storage containers in Fen Liquor production.
