Effect of Postharvest Calcium Treatment on Lentinan Content and Cell Stability of Lentinula edodes

Abstract: Fruit bodies of Lentinula edodes subjected to vacuum-infiltrated calcium chloride treatment were used as the materials to explore the effect of calcium treatment on lentinan content, β-1,3-glucanase activity, electrolyte leakage and MDA content. The results showed that the effect of 0.12 mol/L CaCl2 was the best solution. Under the treatment of 0.12 mol/L CaCl2, β-1,3-glucanase activity was 20.54 U/mg, lentinan content was 0.38%, electrolyte leakage was 85.11% and MDA content was 2.48 μmol/L. Calcium treatments could restrain β-1,3-glucanase activity, reduce the loss of lentinan during storage and maintain the integrity of cell membrane structure.
