The Basic Situation and Developing Trends of Flavour in China

Abstract: The number of flavor is the largerest in the food additives. Flavour is used widely in food. The industry of flavourand flavouring composition is developing rapidly in recent years. There are 1283 flavour compounds which are permitted to useas food additives in China standard-GB2760-1996. The developing trends of flavour in China are discussed briefly in this paper.
