Analysis of Fatty Acids in Chestnut by GC-MS

Abstract: To determine fatty acids in chestnut,chestnut oil was extracted by soxhlet extraction,the fatty acids in the oil were esterified by sodium hydroxide-methanol,and then analyzed by gas chromatography-mass spectrometry(GC-MS). Eight fatty acids are identified in the chestnut,and the main components are unsaturated fatty acids.
