紫苏保健饮料的研制与抗氧化功能研究

摘要:

目的:研制含紫苏功能成分的保健饮料并评价其抗氧化功能。方法:市购新鲜紫苏叶经搅拌、打碎、酶解、酸浸、过滤、高压等处理获紫苏提取液,以此提取液配制饮料,通过正交设计与感官评分,确定出最佳配方。用不同剂量的紫苏饮料分别喂饮小鼠28d,摘眼球取血,用试剂盒测血清丙二醛(MDA)含量与超氧化物歧化酶(SOD)活力。结果:紫苏保健饮料能明显降低剂量组小鼠血清MDA 水平(p < 0.05),提高血清SOD 酶活性(p < 0.05)。结论:紫苏保健饮料具有抗氧化功能,可能具有延缓衰老的作用。

Abstract:

Objective: To develop health drink containing functional ingredients of perille and to evaluate its antioxidant effect. Methods: Perilla extract was obtained from the fresh purple perilla leaves by the steps of pretreatment, enzymolysis and acid extraction. The best formula of drink was determined by orthogonal test and sensory analysis. Then experimental mice were fed the perilla drink for 28 days and their blood samples from eyes were collected. Finally, the level of malondialdehyde (MDA) and the superoxide dismutase (SOD) activity in serum were analyzed with reagent kits. Results: The perilla health drink obviously reduces the serum MDA level (p<0.05), and significantly improves the SOD activity (p<0.05) in mice. Conclusion: Perilla health drink has antioxidant and delay-aging function for mice.
