摘要: 综述了微生物来源的酶制剂在食品工业各领域中的应用以及酶制剂应用的安全标准和工业化生产的安全卫生管理,并对酶制剂在食品工业中的发展方向和安全问题进行了讨论。

Abstract: Enzyme preparations coming from microorganism were listed and their applications in food industry were summedup. Safety standards and evaluations were concerned and advices of producing safe enzyme preparations were put forward.Prospect and safety of the enzyme preparation in application were discussed.
