高活性麒麟菜膳食纤维的提取

摘要: 本文采用正交试验法,研究了高活性麒麟菜膳食纤维提取的碱处理和改性工艺条件。结果表明,在最佳工艺条件下提取的麒麟菜膳食纤维的产率为49.0%,膳食纤维干基含量为85.3%,钙含量为1.21%,膨胀力和持水力两项功能性指标分别达到29.5ml/g和17.5g/g。

Abstract: The technological conditions of alkali treatment and chemical modification for extraction of high active dietary fiber (DF) from Eucheuma striatam were studied in the paper by orthogonal design method. The results showed that yields of Eucheuma striatam DF is 49.0%. The contents on dry basis of DF, calcium, expansion capacity and water holding capacity are 85.3%, 1.21%, 29.5ml/g and 17.5g/g respectively for Eucheuma striatam DF extracted under the optimum conditions.
