摘要: 发酵乳产品中益生菌活菌数的正确评价,对保障发酵乳制品的质量和功效具有重大意义。本研究通过对三种不同的益生菌在五种不同的培养基上的生长状况进行了评价和观察,结果发现嗜热链球菌和嗜酸乳杆菌在改良TJA培养基上生长状况很好,瑞士乳杆菌在溴甲酚绿指示剂培养基上长势良好。研究结果为以这些菌种研究开发新型发酵乳产品提供了技术和品质的保证,也为益生菌及益生菌制品深入研究打下了基础。

Abstract: An accurate estimate about the number of live bacteria in fermented products is significant to the products quality and function.In this article the development about three kinds of probiotics growing in five culture media was observed.It found that Lactobacillus acidophillus and Streptococcus thermophillus grew well in modified TJA,Lactobacillus helveticus grew well in bromcresol green indicator culture medium.Results provided technical and quality pledge for new milk products fermented with these bacterium,also established important foundation for the deep study of probiotics and its products.
