摘要: 精确地检测食品中的蛋白质含量对质量管理、科学研究等都是必不可少的。本文在综述食品中蛋白质含量检测方法的原理、特点及应用范围的基础上,介绍最新的研究发展动态,为研究者在蛋白质检测方法选择或进一步改进和发展方面提供依据,以使各种方法得到更好的应用,从而提高食品中蛋白质检测的准确性。

Abstract: Accurate determination of protein in foods is necessary for quality management and scientific research. The principle, characteristics and application of analytic methods for protein contents are reviewed in this article. Meanwhile, the future development trends are also discussed. These investigations will provide a theoretical reference for improving and developing suitable methods of protein detection in foods.
