摘要: 本文分析了果蔬中功能因子的分类及功能,介绍了果蔬功能因子提取和检测方法,并展望了果蔬功能性产品的开发前景。

Abstract: The physiological functions and classify of the functional components in vegetables and fruits were summarized in this paper. Meanwhile, the determination methods and isolation of the active components came from vegetables and fruits as well as development prospect of functional vegetables and fruits food in our country were analyzed.
