Determination and Cluster Analysis of Potential Allicin Content in Garlic from Different Geographic Populations

Abstract: Garlic samples from 25 geographic populations were collected, and the content of potential allicin was analyzed by high performance liquid chromatography, followed by cluster analysis. The results showed that the content of potential allicin in differed noticeably among garlic samples from different with regions and could be grouped into five categories. It was much higher in samples from South Xinjiang, which are worthy of further study.
