The main composition and content of tea ployhenols extracted by mixed glyceride were determind by spectrophotometric methods.The antioxidative effect and the dissolution stability of tea ployhenols extracted by mixed glyceride on refined rape oil were studied.The content of tea ployhenols in mixed glyceride was 0.064g/ml while the optimal quantity of tea ployhenols added in refined rape oil was 150ppm.

Using purified water as the solvent, Green tea was extracted by microwave treatment.The result demonstrated that microwave treatment could improve leaching tea- polyphenols. Being leached 2 times by microwave (Material- water ratio 1:20,Time 3 min),then the green tea was leached by purified water(50℃ ) 1 time in 10min.The result showed that the leaching rate of tea- polyphenols was 90.55 percent, which was higher than that of being leached by the mixture of ethyl alcohol and water. The analysis of HPLC demonstrated that among the tea- polyphenols production made from the Green tea extracted by microwave treatment, there was a little alteration in catechin composition. However, there was not so much decrease to EGCG and ECG.

Based on reaction of Fenton and Haber - Weiss,by using the deoxyribose as a hydroxy radical moleculor,probe the degradation product of deoxyribose by thiobarbituric acid reaction was tested,and compared .The action and potency of scavenging oxygen radical species by superoxide dismutase(SOD),thiourea,tea- polyphenol and ginseng were studied.The results showed that tea- polyphenol could inhibit the anion radical action of superoxide(O2- ) with the effect similar to that of SOD. However ginseng could inhibit not only hydroxyradical(OH) but also O2- with the effect was similar to that of thiourea.

The antitumor activity of tea catechin oxy- polymers(TCOP)was studied with Ehrlichascites tumor and human hepatic carcinoma cell line(SMMC- 7721); The immunomodulatory effects of TCOP were assayed by delayed type hypersensitivity(DTH), phagocytosing method and LDH method..The result suggested that TCOP strongly inhibited the growth of Ehrlichascites tumor(solid tumor).The inhibitory rate in dose of 200 mg/kg.d and 400mg/kg.d was 47.1% and 36.7% respectively for TCOP and 30.8% and 36.6% for respectively TC. MTT assay showed that the different concentrations of TCOP significantly inhibited the growth of human hepatic carcinoma cell line(SMMC- 7721).The concentration- effect relationship was obvious.IC50 values of EGCG and TCOP were 192.1μ g/ml and 115.0μ g/ml resparately; It was found that TCOP(Po,200mg/kg.d× 7d) could significantly intensify DTH caused by DNFB, and TCOP(Po,200mg/kg.d × 30d) increase the activity of NK cell. It also showed that TCOP(100mg/kg.d,200mg/kg.d,400mg/kg.d× 30d) could improve phagocytosing function of peritoneal macrophage(PMφ ) by 11.35% , 31.97% , 50.8% respectively.TCOP could also activate red cell SOD and reduce the content of MDA of old mice very significantly.A remarkable effect of TCOP on inhibiting or clearing NaNO2 was shown on imitating gastric juice.The antioxidant activity and immunomodulatory enhancing effects of TCOP might be one mechanism of TCOP’s antimutagenicity.

Our previous researches showed that tea leaves had a fairly good antibloom effect to chocolate. In order to find out the mechanism, the study of tea polysaccharide was carried out by using the theories of thermodynamics, crystallization kinetics and molecular interactions, also by means of DSC (Differential Scanning Calorimetry) and artificially accelerated bloom etc. The crude tea polysaccharides (TPS) which extracted and separated from tea leaves were further purified and graded into four polysaccharide components— TPSI, TPSII, TPSIII and neutral TPS. The above tea polysaccharides are used to prepare chocolate separately, while compared with control.The results showed that the order of antibloom effects of these polysaccharides is as follows: TPSII > rough TPS >TPSI > neutral TPS >TPSIII. >control. Because there was high content of saccharides such as mannose, etc. in tea polysaccharides, which was of high molecular weightvalue, it was easy to interact with the polar groups in the chocolate paste to form complicated network structure to inhibit the transition of fats, and postpone the V→ VI crystal transformation.Therefore,it showed the good antibloom effect on chocolate.

Tea is a pleasant, popular and safe beverage. Tea provides a dietary source of bioactive components to help humans reduce a wide variety of cancer risks and chronic diseases. The antioxidative activity of green tea- derived polyphenols known as catchins has been extensively studied. The reductive effect is a synergistic action between EGCG, EGC, ECG, EC, pheophytins a and b, and other components in tea leaves, which are more bioavailable for human body. Green tea has a higher content of catechins than black tea. Green tea extract with hot water has high potential and more efficiency to reduce cancer risk than any other tea products or pure EGCG. Protein, iron, and other food components may interfere with the bioavailability of tea polyphenols. Drinking green tea (or polyphenol- rich tea extract) also enhances the cancer- preventive activity of some cancer- fighting medication such as Sulindac and Tamoxifen. Further studies are required to determine the bioavailability of green tea and cancer- preventive functionality.

The processing of oil- soluble tea polyphenols (TP) was studied,made by of microencapsulation of technique of cold spray method,dried in vacum. The optimum composition of the wall materials was investigated by orthogonal arrays as follows: emulsifiers A: B: C =8:0.3:1.7? Microencapsulating rate of tea polyphenols was 67.5% . The product could disperse equally in oil and its antioxidation effect in oil was better than propyl gallate (PG) and butylated hydroxyanisole (BHA).

Based on the analysis of main chemical components and organoleptic quality of canned green tea infusion during sterilization,the effects of L- ascorbic(vc) on catechins,amino acids compositions and infusion color were studied deeply.The results showed that the contents of polyphenols and amino acids decreased except steady caffeine during sterilization. At the same time,infusion color also got yellowish and off- flavor aroma thick..It was also revealed that there was smaller quality change of infusion extracted from low- grade material than from high- grade material in the process of sterilization.Added to the extraction,VC could prevent the color from damaging,but couldn’t effectively prevent catechins and amino acids compositions during sterilization.

The paper studied the continous counterflow extraction of green tea by L screw extractor Concevning the technology on baton extraction, the extracting density, extracting effciency, F.E.A and flavour.ware compared When the extracting temperacture was 85℃ , with 27.0 min time, the ratio of water and tea was 8.3, extracting density of continous counterflow extraction 0.064 kg/L, extracting ratio 83.2% 、 F.E.A 0.92 g/ L· min, and the flavour nice, in comparison with the batch extraction, extracting effciency increased 4.3 times, extracting ratio increased 30% and extracting effciency increased 3.4 times.

In this paper, coarse tea polysaccharides were preliminarily purified by means of Sevag deprotein, ethanol precipitation, two times dialysis etc. A large component, nominated TGP, was fractionated from the polysaccharides by Sephadex G100 gel column chromatography, eluted by 0.1mol/L NaCl. This article dealt with the effect of catechin on activity of Superoxide Dismutase (SOD)of serum in white mice under different experimental conditions.The results showed that catechin could obviousiy enhance the activity of SOD in white mice (better than that of treatment NO.2)Different types of bound catechin(free types、 liposome- bound types and micelle- bound types)under diffrerent intake methods (intravenous injection and oral intake)led to distinct effects on the activity of SOD.The liposome- bound types and micelle- bound types demonstrated superiority of raising the activity of SOD to free types(p<0.05)and the intravenous injection better than oral intake(p<0.05).

In this paper, we compared the hematoxylin- eosin staining method, typan blue staining and giemsa staininmsethods to detectin vitro the EJ cell apoptosis induced by tea polyphenols. DNA gel electrophoresis method was used to make sure of apoptosis result induced by the same concentration of tea polyphenols. Typical cell apoptosis structure “ DNA ladder" was found in the EJ cell culture apoptosis induced by the tea polyphenols£¨ 500|ì g/ml£(c) . Typical cell apoptosis structure was all found in the three methods apoptosis cell staining . But the hematoxylin- eosin staining of the apoptosis cell showed more clearly than the other two. The conclusion was that DNA gel electrophoresis method with hematoxylin- eosin staining to detect EJ cell apoptosis induced by tea polyphenols was the best method of the three.

Cigarette smok has markedly induced lipid peroxidation in rat lung cell suspension. However, smoke produced by cigarettes that were processed with green tea polyphenols (GTP) has showed a reduced damage to rat lung cell membranes,This result suggested that GTP added into cigarette could significantly inhibit lipid peroxidation induced by cigarette smoke through scavenging free radicals. GTP could inhibit lipid peroxidation by 30% ? 40% , which was better than that of vitamin C or E.If GTP was also added into cigarettes in combination with nano SiO2, the result showed that this combination was superior to the inhibition of lipid peroxidation induced by cigarette smoke.

The headspace aroma of both the roasted and the baked green tea infusion extracted by the absorptive column device was analysed for the first time by GC/MS forcomparison.The result showed that the difference of the aroma composition between the roasted and the baked green tea was small, but the difference of their aroma components in relative content was significant , which caused mainly the different aroma character istics of the roasted and baked green tea.

The interference components such as monosaccharide, disaccharide, oligosaccharide, tea polyphenol and amino acids in tea samples were removed by back- flowing with 80% ethanol. The contents of polysaccharide extracted with water in tea samples, which were collected from Wu- Yuan County of Jiangxi Province, were measured by anthrone- H2SO4 colorimetry, Meantime, compared with the polysaccharide contents in other kinds of tea. the results showed that the method used in this paper was simple, the color of the treated samples was stable in 4 h and the average value of the recovery for polysaccharide measurement was 99.2% ± 1.80% with 1.82% of RSD (n=3). The contents of polysaccharide in green tea of Wu- Yuan County ranged between 4.17% ? 6.35% and 3.10% ? 3.53% in CTC black tea. The different content might be related to the species, altitude, habitat and kind of tea grown.

Objective To determine 12 organochlorine pesticide residues in Tea by capillary gas chromatography with electron capture detector (CGC- ECD). Method Samples were extracted by FDA method. The capillary column was DB- 1(30m× 0.25mm × 0.25μ m);injector temperature was 250℃ and detector temperature was 280℃ ;The column temperature program was initial temperature 150℃ with rate of 15℃ /min to 180℃ (hold 1min), rate of 10℃ /min to 210℃ (hold 2min),and rate of 15℃ /min to 240℃ (hold 10min). The pesticide residues were calculated by external standard method. Results the average recoveries and RSD ranged from 80.1% to 103.8% and 0.52% to 6.21% respectively, at three spiked mixed organochlorine pesticide levels. All the samples showed organochlorine pesticide residues. Conglusion The method is easy in operation and has good separation and repeatability.

In the polyviny alcohol medium,a flow injection analysis on turbidimetric determination of potassium was studied.The method was based on the reaction of potassium with sodium tetraphenylboron(TPB) to form a stable colloidal precipitation.Beer’ s law was obeyed in the range 0? 25.0μ g/ml of potassium.The samples were digested by microwave.The recovery obtained by standard addition method was 94.6% ? 103.4% .The relative standard deviations obtained (n=8) was less than 3% .The frequency of analysis was 60 samples per hour.The proposed method was rapid,simple and convenient and it has been applied successfully to determine potassium in tea samples.

The extract condition, extent of sample application, precision and accuracy of the TLC- UV method for chlorogenic acid in green tea were studied. Separation and determination of chlorogenic acid in green tea (20010312 YueChun) for assaying the medicinal component showed that the content of chlorogenic acid was 9.12mg/g in green tea.

China started its organic tea production in early 1990s. Organic tea was growing very fast as it generated more incomes, provided more employment opportunities,contributed to an ecological sound future for humanity and made the agriculture more sustainable. Organic tea has become a major item of Chinese organic products. In 2000, acreage devoted to organic tea reached 10,000 hectares yielding 4,500 tons, 10 times higher than that in 1997 in terms of total acreage and yield. About 2,500 tons of total production was exported while 2,000 tons went to domestic consumers. Tea Research Institute of Chinese Academy of Agricultural Sciences has already worked on the research and development of organic tea. It has had full departments covering all aspects of tea sciences and technology. There have been nearly 100 certified organic tea farms in China. Certification has been done by the Organic Tea Research and Development Centre (OTRDC),and Tea Research Institute of the Chinese Academy of Agricultural Sciences. The OTRDC has developed the standards for organic tea based on the International Federation of Organic Agriculture Movement (IFOAM) basic standards, which has officially become Zhejiang provincial standards and will become national standards by the end of 2001. Further research and development in the aspects of production, marketing and technology dissemination were discussed by the authors in order to expand the organic production on larger areas under different agronomic and ecological conditions, so as to achieve higher level of productivity.

The paper stated toxicity of oxidative oils and developing history of antioxidant.The antioxidative activies of BHA、 BHT、 green tea polyphenols(GTP) and liposoluble green tea polyphenols(LGTP)antioxidant were compered.The results demonstrated that LCTP and GTP are more effective than BHT and BHT.It has pointed out some disadvantage of synthetic antioxiant and declared that green tea polyphenol was a prospective food antioxidant.
