Abstract: The ultrasonic-assisted extraction of polysaccharides from the fruiting bodies of Panus giganteus was optimized by response surface analysis based on one-factor-at-a-time experiments. Under the optimal conditions: 72 ℃ extraction temperature, 1:44 material-to-water ratio and 57 min ultrasonic treatment time, the maximum extraction yield of polysaccharides was predicted to be 78.22 mg/g and observed to be 75.79 mg/g. Therefore, there was a good accordance between the predicted and observed values.

Key words: Panus giganteus, ultrasonic-assisted extraction, polysaccharide, response surface analysis
